Ingredients
- 1 cup cottage cheese (full-fat or low-fat)
- 3 large eggs
- ½ cup oat flour (or blended rolled oats)
- 1 tsp baking powder
- ½ tsp vanilla extract
- ½ tsp cinnamon (optional)
- Pinch of salt
- Butter or oil for cooking
Optional Add-ins
- 1 mashed banana (for sweetness)
- 1 tbsp maple syrup or honey
- Blueberries or chocolate chips
Instructions
- Blend the batter:
In a blender, combine cottage cheese, eggs, oat flour, baking powder, vanilla, cinnamon, and salt. Blend until smooth (about 30 seconds). - Preheat and grease a non-stick skillet over medium heat. Add a small amount of butter or oil.
- Cook the pancakes:
Pour ~2 tablespoons of batter per pancake into the skillet. Cook for 2–3 minutes until bubbles form and edges firm up. Flip and cook another 1–2 minutes. - Serve warm with:
- Greek yogurt
- Berries
- Maple syrup
- Nut butter
