Fluffy Cottage Cheese Pancakes

Yield: ~8 small pancakes
Time: 15–20 minutes

Ingredients

  • 1 cup cottage cheese (full-fat or low-fat)
  • 3 large eggs
  • ½ cup oat flour (or blended rolled oats)
  • 1 tsp baking powder
  • ½ tsp vanilla extract
  • ½ tsp cinnamon (optional)
  • Pinch of salt
  • Butter or oil for cooking

Optional Add-ins

  • 1 mashed banana (for sweetness)
  • 1 tbsp maple syrup or honey
  • Blueberries or chocolate chips

Instructions

  1. Blend the batter:
    In a blender, combine cottage cheese, eggs, oat flour, baking powder, vanilla, cinnamon, and salt. Blend until smooth (about 30 seconds).
  2. Preheat and grease a non-stick skillet over medium heat. Add a small amount of butter or oil.
  3. Cook the pancakes:
    Pour ~2 tablespoons of batter per pancake into the skillet. Cook for 2–3 minutes until bubbles form and edges firm up. Flip and cook another 1–2 minutes.
  4. Serve warm with:
    • Greek yogurt
    • Berries
    • Maple syrup
    • Nut butter
